What are Boardwalk fries?
Boardwalk fries are the fresh-cut, skin-on fries sold by the cup or bucket along the Ocean City Boardwalk, traditionally seasoned with malt vinegar and salt. At the best-known stands vinegar is the point, and ketchup is not offered at all. That surprises first-time visitors. It delights the returning ones. A large bucket is designed to be shared while walking, and for many families the smell of vinegar on the boards is the single strongest sensory marker of an Ocean City trip.

The vinegar tradition
Malt vinegar with salt is the coastal-boardwalk standard, inherited from British-style chip shops and preserved here more strictly than at most American beaches. Old Bay is the common local alternative. Ordering a bucket, shaking vinegar through it as you eat, and passing it around is the intended format rather than a personal serving.
How fries fit an evening
